cooking

I don't ever talk about cooking here, but today I'm going to. I have a salad that I have made for years (thanks to Kelly and Brent for the fabulous recipe!) and I have "frenched" it up a bit because certain ingredients are not available here.
We have friends coming for dinner tonight, and I made a huge pot of Texas Chili (snaps to Julie G for the Wick Fowler's 2 Alarm Chili Kit!) and I'll have cornbread and this awesome salad. For all you foodies out there-I know you'll love this!

Take a big head of lettuce (I have used many different kinds-original recipe calls for Butter lettuce) and rinse it well

Chop two purple onions into rings
chop 3 avocados
chop 3 pears

mix above 3 with 3 parts olive oil (if you can get a flavoured oil like basil it's fantastic!)and 1 part balsamic (or rice wine) vinagre, add 1 table spoon dijon moutarde

mix in 6-8 ounces gorgonzola or bleu cheese

I put in 12 ounces of what is called "lardon" here-it's essentially really thick, salty bacon bits. I cook these until they are crisp, then add in to liquid/fruit mixture.

last, brown some pine nuts or almond slivers and set aside.

just before serving, mix up liquid/fruit and pour over salad. toss gently. add toasted nuts and serve.

this is soooo yummy and I usually make myself sick sampling the dressing prior t serving, so tonight i am using tremendous amounts of will power not to do it!

okay...go make the salad. it's amazing.

I have partaken of this lovely creation while you were here in Austin and I am a better person for it. Hope all went well & I wish hit were us coming to dinner! Thanks for the recipe!! :)

Hi - I just saw your comment on my blog and then realized you must work with Adam and Tasha - we are enjoying having them "home" for a bit. I love cooking and am always trying out new and different salads - I will definitely be making this one sometime, sounds delicious.
Also, from the comment above, I see you or your kids must be Harry Potter fans. Me too - I read the last book in less than two days! Good recipes, good taste in books and a great name - I think I like you already! :)
